<p>I was trying to get really creative for this one because this is my signature dish. I couldn;t figure out how to properly photgraph it because at the end of the day it looks like a pot of all the other chicken soups. But I really wanted to highlight the ingredients because there&#8217;s nothing fancy. Just chicken, meat herbs and veggies. No soup mix, no fancy spice mixes. The flavors are bursting though. Every time. And I really wanted my readers to know how special of a soup this is. </p>



<p>Then my Instagram friend (aren&#8217;t those the best?!) <a href="https://www.shanakoppel.com/" target="_blank" rel="noreferrer noopener">Shana Koppel</a> came out with a Chicken Soup Recipe product. Where you can send her your family&#8217;s old time recipe for her to design graphically and gift to your bubby or any of those people who have been pestering you for the secret recipe. This idea + my chicken soup recipe -= love. </p>



<p>So not only will you get the recipe here. But you&#8217;ll get a printable PDF of the recipe that you can keep in your kitchen. And because chicken soup is really for the soul, I hope this recipe and PDF will get passed on and on for generations (A girl can dream, right?) </p>



<p>Listen. At the end of the day chicken soup is one of those recipes that you&#8217;ll never be able to make better than your bubby. But this is my little effort to give you a really really good one, that never fails. I hope you&#8217;ll try it. </p>

<p>I&#8217;m declaring a Soup Week here at Fresh Sabra Headquarters. This third seger actually isn&#8217;t really effecting my family logistically. Akiva and I are still working/schooling from home, and the girls have regular gan schedules. But I was meant to visit my mama in the states in a weeks time. The first time I planned on leaving my kids with Akiva. For some much needed mother daughter time. I really just wanted to see my mommy. But not gonna happen. So we&#8217;re rolling with it. And eating lots of soup. </p>



<p>Also because final season is approaching. Lab reports, midterms, assignments. They are all in full swing. And the only thing I have time to do is get my kids bathed and into bed before I get back at it all. So dinner prep looks more like this these days: Saturday night I chop a crap load of veggies. Throw them in Tupperwares and ziplocks. Then throw a new combination of veggies together every other night for a different type of soup. Add a prepped grain (also prepped on Motzash) or legume and we&#8217;ve got ourselves our dinners for the next foreseeable future. </p>



<p>Last reason. Because I have a soup recipe I have been dying to get out. It&#8217;s not out yet, but it is coming later this week. And it&#8217;s not your typical format of recipes. It&#8217;s so cool and fun, and it&#8217;s the yummiest and most comforting of all soups. Can you guess what it is? </p>

<p>I love soup in so many ways, it may be a little obsessive. But I particularly love soup because it is one of those dishes that can never fail. There are always ways to doctor up a bad soup and make it delicious. Also, everyone loves it. I mean do you know of anyone who doesn&#8217;t like soup?! </p>



<p>My most favorite thing about soup though is for sure its ability to allow for such a high quality nutrient profile. Not only can you load in the veggies (and hide them from your most picky eaters), but you can throw in animal protein and bones (got so much to say about bone broth, but we&#8217;ll save that for another post), or plant based protein. You can throw in grains and healthy fats. And you have so much depth of flavor to develop with all the endless spice blends you can make. And the best part is that the more it cooks, the more nutrient dense you can make it! Cooking both bone broth and or specific spices can give that pot of soup such super powers, it&#8217;s so underrated. A soup can literally produce the most balanced of meals. </p>



<h2 class="wp-block-heading" id="noteworthy-ingredients">Noteworthy Ingredients</h2>



<p>So let&#8217;s get down to this soup recipe. It&#8217;s seriously my favorite. A) because it&#8217;s freaking delicious. The spice blend is just the perfect marriage of flavors. And it&#8217;s creamy and warming, and just so so yum. You&#8217;ll have to make it to understand. And B) because this soup medley I use is legit an &#8220;eat the rainbow&#8221; type of blend for grains. If you follow me religiously you  must know how much i stress diversity in food, eating balanced but changing things up to ensure that you are giving your body all of the essentials it needs. And trust me your body needs A LOT of essentials. This soup medley hits the nail on the head. Here&#8217;s <a href="https://tvuot.co.il/product/%D7%AA%D7%A2%D7%A8%D7%95%D7%91%D7%AA-%D7%A7%D7%98%D7%A0%D7%99%D7%95%D7%AA-%D7%90%D7%95%D7%A8%D7%92%D7%A0%D7%99%D7%AA-%D7%9C%D7%9E%D7%A8%D7%A7/" target="_blank" rel="noreferrer noopener">the medley I use</a>. It&#8217;s Tvuot brand and can be found in any Nitzt Haduvdevan or Eden Teva Market. I believe Shufersal carries it as well. Basically it&#8217;s not unheard of to find, and it&#8217;s an essential here in the Buckman household from the months of September through March. </p>



<p>In addition to the medley, I&#8217;d be doing this recipe an injustice if I left out some essential facts about the spice blend used. Cumin: has an anti-inflammatory effect, a nice amount of antioxidants, is a pretty good source of iron, and aids in blood sugar regulation. The more it cooks, the more its healing property seeps into the grains. Combine with the turmeric, you are seriously boosting your immune system this winter. Also fun fact, a recent study showed that turmeric can significantly aid in lowering the effects of PMS. Eat up ladies 😉 One more amazing super power being studied in turmeric currently is it&#8217;s treatment for digestive diseases such as IBS and Chron&#8217;s. This little spice is definitely your friend, so if you haven&#8217;t given it a try in your cooking, now&#8217;s the time. </p>



<p>One last point and then we&#8217;ll get to the recipe. This soup, like most soups is so forgiving. Don&#8217;t have the veggies I&#8217;ve listed on hand? No problem! replace them! You&#8217;ll only be diversifying your food profile (yay)! </p>

<p>This is one of those recipes that people don’t believe takes such little time. The depth of flavor that develops in such a short amount of time is still astonishing to me. The silky butternut squash and the bite of texture that the lentils give, combined with the warmth of the spice mix, create the most perfect bowl of comfort for those cold fall or winter nights. Though I’ll admit, my family eats soups all through the hot Sharon summer months as well. The spice level here is not “spicy” just flavorful, but if you’re into spicy, there is definitely room to add that in.</p>

<p>Let’s talk lentils. I use <a href="https://tvuot.co.il/product/%d7%a2%d7%93%d7%a9-%d7%90%d7%93%d7%95%d7%9d-%d7%90%d7%95%d7%a8%d7%92%d7%a0%d7%99/"><em>tvuot</em> red lentils</a>&nbsp;because red lentils are the fastest cooking lentils. But you can for sure experiment with green or black lentils; you’ll just have to adjust the cooking time accordingly. In general, I find <em>tvuot</em> to be a great brand for all my grain and legume needs. They have a wide variety of organic, non-genetically modified grains. The mass selection keeps my family’s diet diverse and nutrient dense. Their products are sold in almost every health food store I’ve come across in Israel.</p>

<p>This recipe uses coconut milk to cream together all the flavors. Doesn’t really matter which brand you choose here, just wouldn’t suggest skippering on fat content here. I always tell my clients not to be afraid of a little fat. One canful in an entire pot of soup really won’t make much of a difference on your waistline, but it will make a huge difference in the taste department. A creamier consistency makes such a huge difference in the final product. I like Shufersal’s green coconut cream because its often on sale, but also find <em>NutraZen</em> to be on sale quite often, and side note, NutraZen is the best Isupplier I’ve found for all your coconut needs. I like <a href="https://www.nutrazen.com/product/%d7%a7%d7%a8%d7%9d-%d7%a7%d7%95%d7%a7%d7%95%d7%a1-%d7%90%d7%95%d7%a8%d7%92%d7%a0%d7%99-%d7%9c%d7%9c%d7%90-%d7%92%d7%9c%d7%95%d7%98%d7%9f-22-%d7%a9%d7%95%d7%9e%d7%9f-%d7%9c%d7%9c%d7%90-%d7%aa%d7%95/">this one</a> (but both the 22% and 17% will work).</p>

<p>The other perk of this recipe is although it uses few ingredients, it is still packed with a tremendous amount of plant based proteins, so this makes a wonderful meal for the vegans amongst us, and for those of you looking to incorporate more of a plant based diet. One cup of lentils packs in 18 grams of protein. Often when animal protein is lacking, people face an iron deficit as well, but lentils pack in 1/3 of your daily irons needs. Another win I’d say.</p>
