Healthier Peach Cobbler

4 medium peaches or nectarines, sliced*
1 tbsp maple syrup
1 tsp cornstarch or arrowroot powder (optional)*

Topping:
1/3 cup maple syrup
1/4 cup grapeseed oil or cocnut oil
1/2 tsp vanilla
1 cup spelt flour**
1/4 tsp salt
1/2 tsp baking powder

optional:
1/4 cup blueberries
your favorite vanilla ice cream for serving

1. Preheat oven to 180 degrees Celsius
2. Slice peaches to desired size, put straight into a greased baking dish. Add in maple syrup and cornstarch and mix to ensure the fruit has been coated evenly.
3. Combine the topping ingredients and spoon in dollops over the peaches.
4. Bake in preheated oven for 25-30 mins, or until the top begins to brown
5. serve warm with your fav vanilla ice cream

Notes:
*the cornstarch/arrowroot powder is just there as a thickening agent. Not crucial, but does give the fruit a nice thick texture. If you don’t have any on hand, don’t sweat it, I’ve made without plenty of times
**I’ve tried this recipe with 100% whole wheat flour, and still comes out incredible, so you can definitely sub.
